Manila Recipes stimulate even the most cultured palate.

Some quick and easy Manila Recipes:

Crispy Squid: After rinsing, cut the squid into small sections and pat dry. Add to a bowl of flour, spice powder, salt, pepper and chili for coating. Drop in a wok, using the oil of your choice and heat until curled. Serve with some lettuce and soy sauce for dipping.

Snow Cone / Shaved Ice: Add a little sugar to some cups of water and bring to a slow boil then remove from the heat. Mix in your favorite juice powder like Mango or Orange and stir until the granules dissolve. Let cool and simply add to a bowl of crushed ice.

Ana Lyn, in the group Bohol Locals, shares a delightful recipe for

Puto Maya.

Puto Maya is glutinous rice cooked in coconut milk and, just like puto bumbong, eaten with a mixture of niyog (grated coconut) and sugar.

INGREDIENTS

  1. 2 cups sweet rice (glutinous rice)
  2. 4 cups coconut milk
  3. 1 cup sugar
  4. a bit of ginger sliced thinly
  5. pinch of salt
  6. 1 sm. grated young coconut

PROCEDURES

  1. Rinse rice and place in 2 quart saucepan
  2. Add coconut milk, sugar, ginger.
  3. Boil for 20 minutes and stir once in a while
  4. Simmer until the sweet rice is cooked.
  5. Mold cooked rice in small cups.
  6. Sprinkle sugar and top flat surface with grated coconut.
